Indulcita sau aromata, frisca era foarte populara in cofetarie inca din secolul 16. Se numea lapte de zapada (neve di latte, neige de lait). Intr-o reteta englezeasca din 1545, erau incluse si albusuri batute precum si  aroma de  apa de trandafir si zahar, ea era batuta cu ramuri de salcie pana la aparitia spumei, un proces care dura ore.

In 1930, dupa multe controverse privind paternitatea inventiei se patenteaza spuma de frisca intr-un recipient gen sifon, cu oxid de azot.
