Acest desert pufos a fost inventat in anii 1700  de un bucatar italian din Genova, Giovan Battista Cabona -Giobatta. El a devenit faimos in toata Europa si imparte succesul acestei prajituri cu marchizul Domenico Pallavicini, ambasadorul italian in Spania care l-a ales ca chef la amabasada. Oficial pandispanul a fost prezentat la un banchet la Madrid. Membrii Casei Regale Spaniole, incantati, l-au botezat Pate Genoise, in onoarea orasului din care provenea bucatarul. Mai tarziu, au aparut variante de pandispan, anglo saxone, in epoca victoriana cu melasa, in zilele noastre el a primit arome si umpluturi noi, pentru ca deliciul sa fie complet.
